Almond butter coconut banana fudge

Here is a recipe that I got from beyondthepeel.net. It’s really tasty and a great way to eat more coconut oil.

The recipe:

3/4 cup unrefined  cold-pressed coconut oil

3/4 cup almond butter

1 banana mashed

1 tsp rapadura sugar

1tsp raw honey

 

Mash banana and mix with melted coconut oil. Stir in almond butter when thickened. Add sugar and honey. Refrigerate to make firm.

I divided the batch into 3 parts, 1 had no sweetener, 1 had 1 tsp rapadura and the last had both rapadura and honey. The first batch… well… tasted kind of like play dough. It needs the sweetener to taste good. I also made a separate batch and mixed in a raw organic farmer’s market egg to make it creamier and emulsify the fats.
