Crumbly oat flour shortbread

Since transitioning to fresh-ground whole grain flours, I thought i may try an adaptation of a simple cookie recipe that I have made for years on store bought flour. It’s the simplest cookie recipe I know, and quick to make.

I soaked oat groats overnight in water kefir. Dried and ground the next day.

Recipe:

1 cup and 1 tsp grass-fed butter

1/2 cup powdered sugar (I ground up Rapadura sugar in a coffee grinder)

4 cups oat flour (originally the recipe called for 2 cups wheat flour, but I found the oat flour to be less dense so it required more)

1 pinch salt

2 pinches baking soda

 

Bake 10 minutes in the oven at 375 F. Spoon out batter and pat down, or form into shapes. My sister likes to pretend she is a dog, so I made dog-biscuit shaped cookies too. I found fresh-ground flour to be relatively sweet, could have probably tasted good with half as much sugar.

      Thanks! Still working on it, but hopefully within a month it will be more complete. I used simple catch theme. I wanted something with a logo, you can just type in logo to the themes and there are several cool ones to choose from.
