Gluten-Free cake

I adapted this recipe from the Polish recipe for babka. It’s relatively simple and easy to make.

-Grind: 1/2 cup buckwheat, 1/2 cup oat groats and 1 cup of tapioca pearls (or use pre-ground flour)

-1 cup rapadura sugar (or whatever sweetener equivalent)

-3/4 cup water

-3/4 cup oil (coconut, palm, butter, whichever, etc.)

-1/2 tsp baking soda

-4 eggs

-1/2 tsp Apple cider vinegar or lemon juice or acid of some sort

Add 1 tbsp vanilla if you want extra flavor (optional)

 

Bake for about 30-40 minutes at 350 F in a greased pan.

I like to coat the top in honey and let it melt into the cake when I take it out of the oven. This is optional and it still tastes good without.
